What are your plans for the coming Easter weekend? I am planning to spend as much of it as I can in the garden (and I have a pretty long list of things I’d like to get done, including planting some interesting fruit-bearing shrubs and building trellises for my sugar snap peas). But there will also be the traditional family brunch at my in-laws’ on Sunday and on Monday we will be hosting a spring dinner with friends. And it wouldn’t be Easter if we did not bake the Easter Lamb cake and coloured at least a dozen eggs. Oh, and I almost forgot: Esther is going to have a party to celebrate her 18th birthday (which was 7th March) with her friends. At our place. Remco thinks we’d better move to a hotel for the night…Or camp in the garden?
In case you’re still looking for some recipes for Easter, I thought I would round-up some of my favourites from the past years. Apart from the Easter cakes, this time of year for me also means eating a lot of eggs, spinach and herbs. Because of the unseasonably cold weather, nettles are not yet growing here but wild garlic is and maybe you can want to do a little spring foraging this weekend too?
Whatever you do, I hope you have a lovely Easter!
